Baked Mac and Cheese {by request}


I couple of days ago I had a comment under the Falling Christmas Tree post from Carly requesting my Mac and Cheese recipe from my Thanksgiving cooking marathon. So without further adieu:
Baked Mac and Cheese {a staple at any of our family gatherings}
2 T. cornstarch
1 t. salt
1/2 t. dry mustard
1/4 t. pepper
2 1/2 c. milk
2 T. butter
2 c. shredded cheddar cheese
1/2 c. sour cream
8 oz. elbows, cooked 5 minutes and drained
In a medium saucepan combine first 4 ingredients; stir in milk. Add butter, stirring constantly, bring to a boil over medium-high heat and boil 1 minute. Remove from heat. Stir in 1 3/4 c. cheese and sour cream until melted. Add elbows. Pour into a greased 2-quart casserole dish. Sprinkle with reserve cheese. Bake uncovered at 375 degrees for 25 minutes or until lightly browned.
{My SIL can attest to the fact that I never follow the recipe to the letter. I don't really measure either. I usually add a little more noodles than 8 oz. because I don't like my mac and cheese real saucy. I also add the full 2 cups of cheese into the sauce and grate extra for the top. I always use extra-sharp cheddar but usually mix yellow and white together.}

I love that we both have girls named Mary Reese! We named MR after both of her grandmothers. We think the name is absolutley beautiful, but have to constantly defend it. Im the first to correct someone when they call her "Mary":)
